Mustard greens are the most pungent of the cooking greens and lend a peppery flavor to food. Curly mustard is distinctive for its frilly leaf edges. Mustard leaves are a versatile kitchen green and source of both vitamins A and C and contain several other vitamins and minerals as well as fiber and protein.
 
Ideal Temperature: 33 F. Ethylene sensitive. Cracked ice around and in packages may help extend shelf life. Keep at proper humidity levels (90-95%) to prevent wilting. It is normal for mustard greens to show a slight bronze tint.
